The thunder of falling water adds a spectacular element to the already remarkable experience, where the cuisine takes inspiration from the region's traditional heritage of early frontier cooking to create a seasonal menu of uniquely Colorado dishes. Home to the epitome of Colorado cuisine; try the Bison Bistro Steak, a wonderfully tender cut of meat that's robust in flavor. It's served with locally sourced mushrooms (from just up the road in Fort Collins), fire roasted brussels sprouts, and house made 1858 spiced compound butter.

In keeping with the tradition of western elegance since the opening of their doors in 1918, The Broadmoor will appreciate you honoring the following dress requirements throughout the resort. Please no sleeveless shirts for gentlemen; hats for gentlemen are allowed but must be properly worn and removed in outlets accordingly. The Penrose Room: With a nod to the tradition of Penrose elegance, a jacket is required for gentleman with slacks or dressy denim only. Appropriate cocktail attire is required for ladies.
Dressy Resort Attire: Collared shirts are required for gentlemen, and a seasonal sport coat or blazer is suggested with slacks, dressy denim, or Bermuda length shorts.
